The market will emphasize sustainable, wild-caught Gulf seafood, particularly bycatch. It was recently named by Bon Appetit as one of ‘the most anticipated restaurant openings of the season.’
Porgy’s owners aim to connect New Orleans consumers with Louisiana’s many traditional, multi-generational, and independent fisheries. The market offers fresh-cut filets and whole fish from prolific but lesser-known species alongside shrimp, oysters, crabs, and seasonal delicacies like crawfish. Chef Wataru Saeki helms the restaurant kitchen with sandwiches, salads, boiled seafood, and crudo that reflect the market’s ever-changing selection.
