Construction of the 33,000-square-foot building, at the edge of Nicholls' campus began in September 2013 and was scheduled to be completed in December 2014.

Weaver says weather and shipping delays have been the biggest problems.

The $12.6 million building on eight acres includes four teaching kitchens, a demonstration room, food-storage facilities and a bistro to give students real-life experience.
