Carnival Culinary Solutions Completes Move into Jefferson Parish Facility

NEW ORLEANS — Carnival Culinary Solutions, the manufacturing arm of Pigéon Catering & Events, has completed its relocation from Front Street in New Orleans to a facility at 803 Jefferson Highway in Jefferson Parish. The building also houses Pigéon Catering and the new Le Provisions gourmet market.

Established in 1997 by brothers Dean and Jean Pierre Pigéon, Pigéon began as a small catering operation linked to a Kenner Deli. In 2006, it acquired Gumbo Shop Catering, and in 2007, it purchased Carnival Culinary Solutions. Initially known for crab cakes, the food manufacturer now offers a range of appetizers, dips, soups, sauces, gravies, desserts and entrees.

At the new facility, Carnival Culinary Solutions has increased its production capacity to 175,000 pounds of food per week, with plans to further scale up to 50,000 pounds per day. The facility spans 44,000 square feet and has a 10,000-square-foot freezer and an in-house bakery.

Jean Pierre Pigéon, managing partner for Carnival Culinary Solutions, said the company plans to triple its workforce while shifting to a 24-hour operational model. 

“We are bringing a part of Louisiana to the rest of the United States,” he said. “We procure recipes from chefs across the nation to craft our line of food items. By replicating their signature dishes on a large scale, we ensure consistency and quality for restaurants across the country. The products undergo inspection by the USDA and FDA and are shipped nationwide in compliance with USDA regulations.”
